Rita's Post Thanksgiving Casserole

SHAKER HOLIDAY EGG CASSEROLE

Ingredients

1 pound bacon, cut into small pieces

1 bunch green onions, green part only, chopped or 1 small onion, chopped

4 cups frozen shredded hash brown potatoes, thawed

10 eggs, lightly beaten

 2 cups shredded Cheddar cheese

1 generous cup small curd cottage cheese

2 cups shredded Swiss cheese

Pepper to taste

Instructions

Preheat oven to 350, and spray 9x13-inch pan.

Cook bacon and onion until bacon is cooked. Drain.

Place in bowl and stir in rest of ingredients. Pour into pan and bake 45-50 minutes or so, until eggs are cooked and cheese is melted. Let rest a few minutes before serving.
