Leftover Mashed Potato Pancakes

You can also add a dash of garlic powder to these, and even some crumbled cooked bacon to the potatoes as you’re mixing them. Or some chopped jalapeno pepper!

Ingredients

3 good cups leftover mashed potatoes, room temperature

1-1/2 cups shredded cheese

1/2 cup flour

1/4 to 1/2 cup finely diced onion

3 eggs

Salt and pepper to taste

Instructions

With a potato masher, smoosh the potatoes in a bowl to get them real smooth again.

Add the cheese, flour, onion, eggs, and salt and pepper.

Stir all the ingredients together very well until everything is fully incorporated and the mixture is smooth.

Form the mixture into patties, you’ll get about =-10 or so.

Fry in a bit of oil until golden brown on each side and heated through.

Gilding the lily: Serve with extra green onions and a dollop of sour cream

•Enjoy warm with a dollop of sour cream, some more sliced green onions, and some extra cheese, if desired.

LEFTOVER TURKEY & CRANBERRY SANDWICHES

No real recipe, but I love to cut Cindi’s stir down rolls in half and hollow out the bottom a bit. Then I smear mayo on it, add turkey and cranberry sauce - arugula would be a nice addition to, then EAT!!!

STEPPED UP LEFTOVER GRILLED CHEESE & TURKEY SANDWICHES

Make the same way you make grilled cheese, subbing in turkey for the cheese, and adding a slice of gouda to the turkey and a dollop of leftover cranberry sauce.

LEFTOVER CREAMY TURKEY & RICE SOUP

Chicken can be subbed in for the turkey. Thanks to the listener, Marie, who shared this recipe a while back! She usually makes it with deli chicken, but suggested leftover turkey. A good suggestion for sure!

Ingredients

Olive oil

1 nice carrot, chopped

1 rib celery, chopped

1 small onion, chopped

Dried thyme to taste - start with 1/8 teaspoon and go from there

Dash or two of garlic powder or a bit of minced garlic

Turkey or chicken stock/broth - 5-6 cups or so

1/2 cup any kind of rice

Salt and pepper

1 cup half & half or refrigerated whipping cream substitute (dairy free)

1/4 cup flour

Chopped leftover turkey or chicken, 4 cups or so

Instructions

Cook carrots, onion, and thyme and fresh garlic if you’re using it in a bit of olive oil, until crisp tender.

Add broth, rice and seasonings. (If you’re using powdered garlic, add it now).

Bring to a simmer and cook until rice is done.

Meanwhile whisk half and half and flour together until smooth. This will thicken the soup.

Stir flour mixture into soup, and cook until thickened.

Add turkey and taste for seasonings.

Gilding the lily: Add some cheddar cheese, shredded, to each bowl of soup.
